Dark Chocolate Muffins; Nutrient Deficiencies impact; Updates and Changes at TFN Services
delicious chocolate muffin recipe, changes to the substack
Substack Updates
I apologize for having a huge gap in my substack posts. I am nearing the end of my Ph.D. dissertation, and the process has also been very time-consuming but rewarding.
We also had a very busy summer filled with many out-of-town guests.
Going forward, I am restructuring my practice and services. I will send updates on this soon. I will transition to more research, public speaking/education, writing, publishing, and only minimal clinical work.
I have decided instead to focus on sending shorter substacks with less content but with greater frequency.
How One Nutrient Deficiency Affects Others
If you are deficient in one nutrient, it can impact many others.
Example: You have a B3 (niacin) deficiency. Likely then, you also have a B2, B6, and tryptophan deficiency. Low B3 will impair the absorption of vitamin C. A lack of vitamin C will impair iron absorption. Low iron can lead to excess copper, inhibiting nickel metabolism, and poor nickel metabolism will further inhibit iron absorption.
You need all your nutrients; the best way to get them is through whole foods!
Dark Chocolate Muffins
I cannot take the credit for this recipe. It came from Dr. Hyman’s site, and the link is below. Once cooled, I put them in the fridge and thought they tasted better the next day.
I love that this recipe has zero added sugar, and you do not miss it with the dark chocolate and cacao powder.
Sugar depresses the immune system, and a sugar-rich diet requires greater nutrient needs to support the immune system. Many of our modern-day diseases can be attributed to the excess processed food in the diet that replaces nutrient-dense foods.

The changes I made include
I swapped Greek yogurt for plain non-dairy yogurt
I used EVOO instead of avocado oil (because it is what I had on hand-coconut oil would work well, too I am sure)
2 bars (not 1) of dark chocolate. I had bars of organic 70% dark chocolate
I mixed in two heaping spoonfuls of almond butter into the batter.
Stop! You're making me hungry! 😉😊😋 It looks and sounds REALLY good!
